Cherry Pistachio Grinch Cookies

A basket holds green cookies half coated with chocolate and pistachio chunks.

Ingredients

  • 8 oz. butter
  • ½ cup powdered sugar
  • 1⅔ cup flour
  • 1 box vanilla pudding mix
  • 1½ teaspoons almond extract
  • green food coloring
  • ¼ cup sliced maraschino cherries
  • ½ cup pistachios
  • chocolate, melted

Instructions

  • Mix butter and powdered sugar.
  • Add flour, vanilla pudding mix and almond extract.
  • Add green food coloring.
  • Add maraschino cherries, pistachios and mix.
  • Scoop each cookie and spread out evenly on a baking sheet.
  • Flatten and bake for 10 minutes at 350 degrees.
  • Once baked, dip half of each cookie in melted chocolate and sprinkle pistachios on top.
